On making french baguette


This is how I make french baguette. All units converted to cups for my convenience.


Flour 3 2/3 cups
Warm water 1/4 cup
Cold water 2 cups
Salt 2 teaspoons
Active dry yeast 1 1/2 teaspoon


  1. Mix warm water and active dry yeast in a small cup
  2. Mix flour and salt in a large bowl
  3. Mix flour and yeast mixtures
  4. Add cold water until the dough is "shaggy"—see {here} for reference
  5. Cover with plastic wrap and let rest for 30 min
  6. Flour a work surface, put dough on the surface, press it into rectangle and fold it. Turn and repeat.
  7. Put dough in an oiled bowl and cover with plastic. Let rest for 1 to 2 hours
  8. Place dough on a baking sheet with parchment paper
  9. Make loaves out of dough, cover with towel and let rise for 30 to 45 min
  10. Pre-heat oven to 450 degrees F (230 degrees C)
  11. Uncover loaves, sprinkle with flour, slash top, and put baking sheet with loaves in oven
  12. Bake about 30 to 45 min
